Astringency is a feeling, not a taste. Tannins in food bind to the proteins in saliva, which stops it from lubricating the mouth. The tongue and cheeks then feel dry and rough. Strong black tea, red wine, unripe bananas, unripe persimmons, pomegranate skin and walnut skins all cause it. A little adds structure to tea and wine. Milk in tea softens it, because the tannins bind to the milk proteins instead. Indian tradition counts astringent among six tastes.
