Curd
In South Asia, milk set into a soft, sour food by bacteria. Elsewhere it is called yogurt.
Also: dahi, yogurt, yoghurt
In Indian English, curd means dahi, which is milk fermented with a little of the previous batch until it sets. It is eaten plain with rice, whisked into the drinks lassi and chaas, mixed with vegetables as raita and used to marinate meat. Many homes set a fresh pot every night. In British and American usage, curds are something else: the solid lumps that form when milk is curdled with acid or rennet, the first step in making cheese.
