Spice blend
A fixed mixture of ground or whole spices and herbs, used as one seasoning.
Also: spice mix, seasoning mix
Most cuisines rely on a few set mixtures that give their food a recognisable character. Examples include garam masala in India, ras el hanout in Morocco, berbere in Ethiopia, baharat in the Arab world, five-spice in China, shichimi togarashi in Japan and jerk seasoning in Jamaica. Recipes differ from one household and shop to another. Whole spices are often toasted before grinding to bring out their aroma. Ground blends lose strength within months.
