Swallow
A West African, mainly Nigerian, name for soft starchy doughs eaten with soup and swallowed without chewing.
Also: swallow food
Swallow is the everyday Nigerian word for a whole class of staple foods. Each is a smooth, firm dough made from a starch cooked with hot water. Eba is made from garri, a toasted cassava meal. Amala is made from yam flour, pounded yam from boiled yam, and tuwo from rice or maize. A small ball is pulled off by hand, dipped in soup such as egusi or okra, and swallowed. East and southern Africa have similar staples, such as ugali.
