What is eaten for Fiestas Patrias (Chile)

On 18 and 19 September Chileans celebrate the start of their independence. Towns set up fondas, fairgrounds with dance floors for the cueca and long rows of grills. The food is fixed by custom. Empanadas de pino are baked with a filling of beef, onion, egg and olive. Meat is grilled as asado, sausages go into bread as choripán, and skewers are sold as anticuchos. People drink chicha, a sweet lightly fermented grape or apple drink, and the terremoto, white wine with pineapple ice cream.
