Sambal
A chilli-based paste or relish from Indonesia, Malaysia and nearby countries.
Sambal is made by grinding chillies with other ingredients such as shallots, garlic, shrimp paste, lime juice, sugar and salt. It is traditionally worked in a flat stone mortar. Some sambals are raw, others are fried. Indonesia has a very large number of kinds. Sambal terasi includes fermented shrimp paste. Sambal matah from Bali is a raw mix with lemongrass. It is eaten as a condiment with rice and also cooked into dishes. Sri Lanka has its own sambols.
