Salsa
Spanish for sauce. In English, it usually means the Mexican table sauces of chilli, tomato and onion.
In Mexico, salsa covers a huge range of sauces, raw and cooked. Salsa roja is red, based on tomatoes and chillies. Salsa verde is green, made with tomatillos. Pico de gallo is a fresh, chopped mix of tomato, onion, chilli and coriander. Traditionally the ingredients are ground in a stone mortar called a molcajete. Salsas are spooned onto tacos, eggs, grilled meat and almost everything else. Each taco stand sets out several.
