Tandoor
A deep clay oven, heated by charcoal or wood at the bottom, used to bake flatbreads and roast meat.
Also: tandoori oven, tannour, tonir
A tandoor is a tall clay or metal oven shaped like a jar. A fire of charcoal or wood burns at the base and heats the thick walls to a very high temperature. Flatbreads such as naan are slapped onto the inside wall, where they stick and bake in a minute or two. Meat is threaded on long skewers and lowered in. Ovens of this kind are used across South Asia, Central Asia, Iran and the Caucasus, under names such as tonir and tandir.
