Kebab
Meat grilled or roasted, often on a skewer. The word covers many dishes from the Middle East to South Asia.

Kebab entered English through Turkish and Persian. Shish kebab is cubes of meat grilled on a skewer. Doner kebab is seasoned meat stacked on an upright spit, roasted as it turns and shaved off in thin slices. The same idea became shawarma in Arab countries and gyros in Greece. Seekh kebab is spiced minced meat pressed around a skewer. Some kebabs, such as the shami kebab of South Asia, are patties fried in a pan.
