Appellation
A legally protected name that may be used only for a product made in a defined place by defined methods.

An appellation ties a food or drink to its place of origin by law. France built the model in the twentieth century with its appellation d'origine controlee, first for wine. The European Union now runs a wider scheme. Under a protected designation of origin, every step of production must take place in the named area. Champagne, Roquefort, Parmigiano Reggiano and feta are protected this way. India's geographical indication tags, as for Darjeeling tea, work on a similar idea.
