Terroir
The idea that soil, climate, landscape and local practice give a food or drink its particular character.
Terroir is a French word with no exact English match. It began with wine, to explain why grapes of the same variety taste different from one hillside to the next. It is now applied to cheese, coffee, tea, cocoa, olive oil, honey and more. The term takes in soil, slope, rainfall and sunshine, and often the know-how of the people who farm there. It is the thinking behind laws that protect place names.
