Slow Food
A movement, begun in Italy in the 1980s, that defends local food traditions and unhurried eating.

Slow Food was founded in Italy in 1986 by Carlo Petrini, after protests against a fast food outlet opening near the Spanish Steps in Rome. Its manifesto was signed in Paris in 1989. The movement promotes food that is good, clean and fair: tasty, produced without harm to the environment, and paying producers properly. It records endangered local foods in a catalogue called the Ark of Taste and now has members in many countries.
