Mole
A family of thick, complex Mexican sauces made from chillies, spices, nuts, seeds and often fruit or chocolate.

Mole comes from a Nahuatl word for sauce. A mole may contain twenty or more ingredients, which are toasted, ground and simmered for hours. The best known is mole poblano, from Puebla, dark and slightly sweet with dried chillies and a little chocolate. Oaxaca is famous for having seven kinds, including black, red, yellow and green. Mole is served over turkey or chicken and is food for weddings, festivals and other large occasions.
